Describe the bug

As mentioned in #1896, The Release Build GitHub workflow does not actually use the language versions specified at the top.
I'm not sure where exactly the language versions for the builds then come from, probably from the Docker images? Would be great if they are still set somewhere.

Language versions should either be used or not there at all.
