Improves the dune sim CLI’s built-in help by substantially expanding Short/Long descriptions, examples, and flag help across sim auth, sim evm (balances/balance/stablecoins/activity/transactions/collectibles/token-info/token-holders/defi-positions/supported-chains), and sim svm (balances/transactions).

Clarifies authentication key precedence and saved-config behavior, and makes flag semantics more explicit (pagination via next_offset, chain filtering expectations, and JSON-only decoded output notes) to make the commands more self-describing for users and tooling.
