What does this PR do?
Adds Mantle Chat to the ecosystem Projects table. It provides a remote OAuth MCP connection and optional skills, so it belongs here rather than among native JavaScript plugins.
How did you verify your code works?
Checked the local diff and Markdown row: one addition, no unrelated changes. Verified the linked repository is public. OpenCode 1.18.27 passed OAuth sign-in and a canvas read, rename, and restore workflow; the separate V2 example has not been runtime-tested. No application build was run for this documentation-only edit.
