fix(ci): use tracked archives instead of glob for release upload

Single-platform CI (ubuntu-latest) only produces .tar.gz files.
The glob ./dist/*.zip fails when no Windows/macOS targets are built.
Track archive paths explicitly and pass them to gh release upload.
