fix(release): drop sed hook for plugin.json that doesn't exist

Previous commit added a sed hook to goreleaser that edits plugin.json's
version field. This repo has no plugin.json at the root, so the hook
fails and breaks the release pipeline. Remove the hook.

refactor: inject plugin version at build time via ldflags

Replace hardcoded Version string in Manifest() with a package-level
var that goreleaser populates via -ldflags -X. This ensures the
plugin's reported Manifest().Version matches the release tag, so the
workflow engine's requires.plugins[].version check passes.

Reproduces the WS 500 bug: when ResponseWriter is wrapped without
implementing http.Hijacker, gorilla/websocket upgrade fails. Also
verifies the fix (wrapper that delegates Hijack succeeds with 101).
Adds slog.Error to ServeHTTP upgrade failure path for observability.

Room management steps (step.ws_room_join, step.ws_room_leave, step.ws_room_list,
step.ws_broadcast) are now provided by the standalone workflow-plugin-rooms package.
The hub connection manager remains for ws.server core functionality.

feat: remove JSON auto-parse from WS trigger; always set binaryPayload

Set data["binaryPayload"] = msg for all frame types so the pipeline can
decode protobuf directly. Keep data["message"] as a string for logging.
Remove json.Unmarshal into data["payload"] — pipeline handles decoding.

binaries can import the ws.server module directly and register its HTTP upgrade
